If you are a beginner we recommend above all the shiitake and elm oyster mushrooms. It's true that shiitake needs lot of patience until the first mushrooms appear (12-18 months) but they are so tasty and healthy that you should accept the time it takes mother nature to grow them. After the first harvest, you can reliably expect more mushrooms several times a year for many years from a single log. So it's worth it!
If you are also looking for a fast colleague of shiitake for your garden then we also recommend the elm oyster mushroom (Hypsizygus ulmarius). See photo below:
It grows rapidly into the log and produces mushrooms very regularly from May to September. The elm oyster mushroom looks a bit like a light coloured oyster mushroom and tastes similar.
The "standard" oyster mushroom (Pleurotus ostreatus) is also simple to grow. In contrast to the elm oyster mushroom, it is more likely to appear in Spring or Autumn.
